- Vegan Shepherd's Pie (substitute either Boca crumbles or mild beans--think pinto or kidney--for hamburger and Vegan cheese for cow's cheese)

- Lasagna with spinach and either tofu or vegan cheese (add onions, green peppers, mushrooms, and whatever other veggies sound good, smothered in marinara sauce)
